Specialties of the region

Discover the delicious culinary specialties of Haute-Saône...

  • Chicken with yellow wine and morels : Topped with a creamy morel sauce and Jura yellow wine, this chicken delights the taste buds.
  • Morteau sausage : A culinary specialty of Franche-Comté for 1000 years, Morteau sausage is protected by a Protected Geographical Indication.
  • Cancoillotte : Pronounced “can-quoi-yote”, this cow's milk cheese is obtained from a mixture of skim milk, water and butter. Served hot or cold, it can be enjoyed as a spread as well as in dishes.
  • Comté : Raw milk cheese made from cooked pressed paste, it can be enjoyed aged for a long time... With its Protected Designation of Origin, it is the fruit of an exceptional region. The French Montbeliarde and Simmental breeds are the only cows authorized for milk production in Comté.
  • Mont d'Or : If there is a mountain to climb in the Jura, many of us can simply challenge it on the plate. The eponymous cheese can be enjoyed in its spruce box: you can dip your bread and potatoes in it!
  • Montbozon cookie: A melting texture and a scent of orange blossom... this is the promise that a bite of a Montbozon cookie holds.
  • Yellow wine, the gold of Franche-Comté : With a unique grape variety, this golden-colored wine is internationally known for its unique manufacturing process: preserved for 6 years and 3 months in oak barrels without tools.
